cooking for two: tofu and potato soup

this is just something i invented and i am feeling giddy that it turned out yummy. my hubby loves it!

ingredients:
2 cups firm tofu cubes
1 cup baby potato quarters
1 cup brocolli
malunggay
1 medium bell pepper, sliced
1 medium tomato, sliced
1 medium onion, sliced
6 garlic cloves, minced
1 tbsp grated ginger
1 cup all purpose cream
3 cups water
2 tbsp olive oil
1 knorr cube (i used chicken flavor)
salt
pepper
cooking oil for deep frying (i used canola)
lemon

procedure:
1. deep fry the firm tofu cubes and set aside.
2. in a separate container, boil the baby potato quarters and set aside.
3. saute garlic and onion.
4. add grated ginger.
5. add bell pepper and tomato.
6. melt knorr cube in the mix.
7. pour in water.
8. mix in brocolli.
9. add all purpose cream.
10. squeeze a few drops of lemon juice.
11. add salt and pepper to taste.
12. mix in deep fried tofu cubes and boiled potatoes.
13. put the malunggay leaves and simmer until they are wilted.

serve hot in a bowl. enjoy!
